Watermelon Fizz

Who doesn't love watermelon on a hot summer?!

Watermelon Fizz is an easy, bright and refreshing drink full of watermelon, lime, and mint! Perfect for summer parties or just a chill night! You can turn it into an alcoholic cocktail or have it just as a refreshing drink.

Servings: ~ 1l

Prep time: 15 mins

What you need

  • 1 small watermelon ( seeds and rind removed, chopped )

  • 2 lime, wedged

  • 6-8 mint leaves, torn

  • 200 ml tonic water

  • ice cubes

  • 200ml gin (optional)

What you do

1. First, start by juicing cutting your watermelon into chunks, removing and discarding the rind. Place the watermelon in a high-speed blender or food processor, and blend until completely pureed. If you don't want to remove the seeds before, you can strain the juice in a fine-mesh to remove pulp and seeds.

2. In a large pitcher add the mint leaves, crushed (to release more flavour), freshly squeezed lime juice, the watermelon juice and of course, if you want to turn it into an alcoholic cocktail, add the gin before the watermelon juice.

3. Give it a stir, and then add ice. Stir until very cold. Top with the tonic water and garnish with watermelon slices, lime, and mint. Enjoy!
