Hasselback Potatoes

Here you have a unique and delicious crispy potatoes with garlic and butter. There are many ways to eat the potatoes, but this ones are not the average baked ones, these are my favourites!
Hasselback potatoes are the Swedish version of a baked potato. They originated from a restaurant chef in Stockholm, Sweden. Regardless of the origin, I am a huge fan of baked potatoes, especially beautifully sliced potatoes topped with amazing garlic and butter, just like these ones.

I highly recommend using baby potatoes for this dish, otherwise you have to bake them more. For baby potatoes you will need to roast for about 45 minutes, at 220°C, and for bigger potatoes, 60 minutes or more. Just to be sure, I always check the potatoes by poking a fork into them to make sure they're cooked through. The good part is that preparing them takes few minutes.

What you need
500g baby potatoes, yellow or red, washed and rinsed
4 tablespoons salted butter, melted
1 teaspoon garlic powder
salt and black pepper, to taste
1 tablespoon chopped parsley
2 tbsp Parmesan cheese, grated
Optional: paprika, oregano
What you do
1. Preheat the oven to 220°C. Line a small baking sheet with foil.

2. Rinse and scrub the potatoes throughly before using. Peel them if you want, I like them better as they are. Place each potato on a wooden spoon and cut horizontal slits on the potatoes.
3. In a small bowl, combine the butter, garlic or garlic powder, salt, black pepper, parsley and grated Parmesan, or what you like best, together. Toss the potatoes with the garlic butter mixture, you can also use a brush to add the garlic butter inside the slits of the potatoes.
4. Transfer the potatoes to the baking sheet. Roast the potatoes for 25 minutes, check if they need more butter, if not roast for another 20 minutes and check the potatoes by poking a fork into them to make sure they're cooked through. Remove from heat and serve immediately. You can sprinkle on top some parmesan or cheese of choice.
