Egg in a Bagel

This is one of my favourite breakfast recipes! It's easy to make, quick, it takes about 20 minutes to assemble and it is loaded with cheese, avocado and a handful of mixed salad, that makes a delicious brunch or breakfast idea.


Servings: 2

Prep time: 10 min

Cook time: 5-8 min

Total time: 15-18 min

What you need

- 2 eggs

- 2 thin bagels

- cream cheese

- salad ( of your choice)

- 2 cheese slices

- 1 avocado

- 1 tomato or few cherry tomatoes

- salt, pepper, smoked paprika

- lemon juice for avocado


What you do

  1. Place a pan with lid on a medium heat, spray it with cooking spray and let it heat.

  2. Separate the egg, pour the egg white into the centre of the pan, place the top half of the bagel on the egg white's and the egg yolk into the hole of the bagel from the pan. Place a lid over the pan to make sure the egg yolk is frying a bit. ( if you like the yolk runny you can leave the egg for about 5 minutes, if you like it firmer it will take a little bit longer)

  3. When the egg is done to your liking, take the bagel off the heat and assemble the bottom of the bagel with your favourite vegetables, salmon, bacon etc. and then place the egg bagel on top and serve!
