Creamy Mushroom & Tomato Pasta

I love italian food! I believe that everyone loves a creamy pasta dish and this one doesn't disappoint! Why you'll love this pasta dish?! It's simple! Because is quick and easy, has a delicious homemade sauce and it's a tasty meatless pasta dish.

Cook time: 10 min

Total time: 20 min

What you need


-200g pasta

-300g canned chopped tomatoes or tomato sauce

- 4-5 medium size mushrooms, chopped

-2 garlic clove, chopped

-1 onion, chopped

-2 tbsp chopped basil

-2 tbsp chopped sun-dried tomatoes

-1 tsp italian herbs

-salt and pepper, to taste

-fresh basil and grated parmesan or cheddar cheese to serve (optional)


What you do


1. Bring a large pot of water to a boil. Add pasta and a pinch of salt and cook according to the package instructions or until just al dente.  Drain pasta, reserving 1/2 a cup of the pasta cooking water - you might need it for later.


2. Meanwhile, heat 1 tablespoon of oil in a large frying pan. Add the onion and garlic, sauté for about 2 minutes, add the mushrooms, sauté until softened, and then add chopped tomatoes, sun-dried tomatoes, basil and herbs and cook for 2 more minutes. Add some pasta water if needed!


3. Add the sauce to the pasta and toss until combined. Sprinkle with some basil leaves and grated cheese, if liked, and serve!




Tips for making pasta!

  • Salt your pasta water once it’s boiling, this adds flavour to the water which is absorbed by the food. I use like 1/2 teaspoon of salt to 250g  of pasta.

  • Save some pasta water – Save half a mug of pasta water just before draining, you might need it for the pasta sauce. 

  • Don’t let your pasta sit for too long after you drain it, it will stick together and it will turn into a gummy pasta. Try mixing cooked pasta with a little bit of pasta water and sauce as soon as possible or rinsing them under cool water helps too.

  • Start sautéing the onion and mushrooms when the water starts boiling.
