Broccoli & Sesame Frittata

Vegetables are an essential part of any diet and I know most of you get to a point where you don't know what to do or cook with them, so I will show you countless ways of using them and to add variety and interest in your meal.
I want to encourage anyone who thinks they don't like vegetables to try some of my special dishes. First of all, let's try this fabulous broccoli frittata. It's easy, delicious and comes together in minutes; it's healthy, filled with veggies, eggs and cheese, which makes it a perfect low carb breakfast or brunch.

Total time: 30 min
Ingredients:
-180g broccoli, broken into small florets
-80g cauliflower, broken into small florets
-4 eggs
-1-2 spring onions, chopped
-1 onion, chopped
-2-3 garlic cloves, finely chopped
-1 red pepper, chopped
-salt and pepper, to taste
-grated parmesan cheese (or cheddar)
-1 tbsp olive oil
Method:
1. Cook the broccoli and cauliflower in a lightly salted boiling water for about 7 minutes. Drain, plunge into cold water, drain again and set aside.

2. In a large frying pan, heat the oil, add the onion, garlic and red pepper, cook for about 10 minutes, stirring frequently, until vegetables have softened. Add the broccoli and cauliflower and set aside.
3. In a medium size bowl, beat the eggs with 3 tablespoons of water, salt and pepper and pour over the cooked vegetables. Cook for about 4 minutes, over medium heat, drawing the mixture from the edges of the pan into the centre, allowing the uncooked egg to flow to the edges of the pan.
4. Sprinkle some cheese on top of the frittata and cook under the preheated grill for 10-15 minutes, or until golden. Sprinkle with some sesame seeds and spring onion and serve!
